Peanut Butter Frozen Yogurt

Creamy. Sweet. Peanut buttery. EASY. And good for you. The PERFECT summer treat.

Confession time: I made this recipe by accident. I was trying to make frozen yogurt balls covered in chocolate, but the chocolate didn’t coat well. I was left frustrated but not defeated because I had made the most tasty, easy, ice cream like treat.

It’s creamy without being icy. It’s sweet and salty and actually really good for you. Gut healthy and high protein yogurt, local raw honey (if you can get it!), and natural peanut butter make up the base of this. I did add a splash of vanilla then stirred in some chopped dark chocolate. LIFE CHANGING.

With just 3 main ingredients, it whips up in a flash! You will have to stop yourself from eating it as is and letting it freeze. No ice cream maker? No problem. You just need a whisk!

I made about half of this into a scoopable frozen yogurt and the other half I put in popsicle molds! The molds I didn’t have the chocolate stirred into but instead drizzled some on top, but I think it would be fine either way! I know the popsicles are going to be a repeat request in my house hold this summer!

Peanut Butter Frozen Yogurt

Ingredients:

  • 3 cups greek yogurt (I made my homemade yogurt then strained it for several hours until it was nice and thick, but store bought is fine too! Just make sure it’s greek yogurt so it’s thick.)

  • 1 cup natural peanut butter (the kind where it’s just peanuts and salt!)

  • 3/4 cup honey (local and raw is best especially if fighting allergies)

  • 1 teaspoon vanilla

  • 3-4 ounces chopped dark chocolate, optional (but highly recommend!)

Instructions:

In a medium bowl, whisk the greek yogurt, peanut butter, honey, and vanilla together. Stir in the chopped chocolate if using.

Transfer to a freezer safe container with a lid. Or, if wanting to make popsicles, put in popsicle molds! Freeze for at least 4 hours. You may need to soften it slightly to scoop. Enjoy!
