Ranch BLT Pasta Salad
It’s everything Midwest and wonderful in this salad. Made with higher protein pasta, it’s pretty good for you too.
Someone asked me to make a bomb gluten free pasta salad recipe directly after I had tested out my ranch recipe. So with that on my mind and bacon always near by, I thought a BLT pasta salad would be great!
I’ve always been a bigger fan of a vinaigrette based pasta salad over a creamy one, but I also don’t turn down an opportunity for ranch. This is perfectly creamy without being too heavy. The homemade ranch is a bit thinner and packed with good-for-you probiotics.
The bacon and tomatoes were obvious for a BLT version of a pasta salad, but I like peppery arugula over regular lettuce for this. Cheese added a bit of richness. Ideally, I would have done a smoked cheddar, but I just used regular cheddar as it was what I had! As with all my recipes, make them with what you have and what you like!
Ranch BLT Pasta Salad
Ingredients:
1 8 ounce box chickpea pasta, cooked according to the directions on the box (be sure not to over cook!)
4 pieces bacon, cooked and crumbled,
1 cup cheery tomatoes, sliced in halves or quarters
1 cup arugula, lightly choped
1 green onion, sliced thin
1 cup cheese, chopped small
2 cups homemade ranch (can use store bought ranch too, but will be thicker)
Instructions:
Place all the ingredients besides the ranch in a bowl. Pour over the ranch and mix well. Place in the fridge until ready to serve. Enjoy!
